The palate is deeply flavoured, yet medium bodied and fresh, with a defining acid line and fine tannin structure.Winemaking:Crushed to open fermenters with the addition of 10% whole bunches. Hand plunging 3 times daily and fermented on skins for 14 days. Pressed directly to seasoned French oak puncheons and matured for 5 months prior to bottling.
