The industry-standard way to proof down whiskey is to put it in a tank, do some math, and add the correct amount of water to hit the desired proof level. But that does a lot of bad things to the whiskey in the process. Fatty acids are killed, heat is produced, and a lot of chemistry stuff we're not qualified to talk about. What we are qualified to talk about is good whiskey. Watershed made a switch in its proofing process that has drastically improved the end product. "Slow Water Reduction," a process common in brandy and cognac production, is the slow addition of water to your spirit over time to lower the proof. Normally, you don't get to try the same whiskey using both methods, but Watershed only just recently made this change for its Small Batch Bourbon.
