Katkoot White Burgundy Premier Cru originates from a unique Premier Cru vineyard, ‘Au Clos’, in Solutré-Pouilly, Pouilly-Fuissé, Bourgogne, France. Shaped by limestone, elevation, and silence. Known for producing long-lived Chardonnay, the site offers purity and verticality that the 2023 vintage captures with precision. The result is a wine built to evolve. It moves with restraint: straw-gold with silver glints, lifted aromas of citrus oil, white flowers, and flint. On the palate, it reveals energy and poise, ripe stone fruit, and mineral vibration. The finish is long, sculpted, and luminous, echoing the verticality of its origin.WINEMAKING PROCESS: Crafted from hand-harvested Chardonnay grapes, gently pressed in whole clusters to preserve purity and texture. Fermentation begins directly in old toasted Allier oak barrels and continues undisturbed for 24 months on the lees. Natural malolactic conversion occurs in barrel, enhancing balance and length. This slow élevage builds depth, minerality, and precision while remaining true to the character of the vineyard.
