Chia seeds naturally become gelatinous (mucilaginous) when overly wet and while this is good for making pudding or jam, it can get in the way of a successful sprout. Add an even layer of seeds to a terra-cotta tray or 10x10 seed starting tray with dry soil. Mist the seeds heavily. Store them in a dark place for about 2 days. Lightly mist the seeds on days 3-4. Once the seedlings develop around day 4, lightly rinse and drain them. After the cotyledons appear, move to bright light. Once the seedlings are about a half to one inch tall, usually around day 6, they are ready for eating. Note that the longer the seedlings are allowed to develop, the more likely they are to become bitter. They are sweetest when harvested at less than an inch tall but green.
