White Hominy, also known as samp, is made from dried white corn kernels from which the hulls and germs are removed. The germs and hulls are removed by soaking the Kernels in slaked lime or lye. The lye is thoroughly rinsed and the corn is left to harden This unique and delicious food looks like corn, but if you cook with it, you know the taste and texture are unique. Hominy is also sometimes cracked to make samp, coarsely ground into grits, or very finely ground to make masa flour.
