After harvest, coffee cherries are carefully hand-sorted and floated to remove defects. They’re then placed in sealed containers without water to ferment for five days, allowing natural fruit enzymes to develop depth and dimension. Once fermentation is complete, the cherries are sun-dried on raised beds before the final milling reveals the dense, expressive beans within.
