The red-legged partridge is smaller and juicier than a pheasant, with tender, mild meat that sits close to chicken in flavour but with more character. One bird per person keeps portioning simple, and it roasts in about 12 minutes. Wrap in streaky bacon to keep the lean meat moist, or pot-roast on a bed of leeks and red cabbage for an all-in-one meal that takes care of itself.
