Halibut has a very mild, sweet-tasting, lean fish with dense meat that can easily dry out if overcooked. When cooked, the snow-white meat loses its glossy appearance and is flaky a nd tender though still firm. Our Halibut are mostly landed by long line between Scotland, Faroes and Shetland. Show more
