A 1kg pack is a sensible weekend project; the 2.5kg pack is for the committed home butcher. The trim will contain fat and sinew, making up at least 20% of the product. The amount of fat will vary according to the season as wild boar put on more weight in the summer, losing it in the winter. It also depends on the age of deer the culled by deer managers.
