The meat is lean, pale and surprisingly mild, with the touch of game that lifts it above farmed chicken without ever being challenging on the plate. Cider, beer or mustard make natural partners, as do prunes, mushrooms and a good slow oven. Each rabbit weighs around 600 to 800g and feeds two to three, depending on the appetite at the table and what else is on the side. UK wild rabbit populations have been under pressure from disease in recent years, so supply is sometimes tight.
