Wilderness Trail Wheated Bourbon 750ML is a Bottled in Bond Kentucky straight bourbon whiskey at 50% ABV (100 proof) in a 750ml bottle. This wheated expression earned Double Gold at both the 2023 New York International Spirits Competition and the TAG Global Spirits Awards, distinguishing it as one of the more critically acclaimed craft wheaters on the market.Quick Facts: ABV: 50% (100 Proof) | Origin: Danville, Kentucky | Bottled in Bond | Distillery: Wilderness Trail DistilleryProduction & HeritageWilderness Trail Distillery operates out of Danville, Kentucky, and has built its reputation on a commitment to sweet mash fermentation — using fresh yeast alone with no backset from previous distillation runs. This places them among the first Kentucky distillers to rely exclusively on the sweet mash technique, a meaningful departure from the sour mash process that dominates the bourbon industry. The wheated bourbon uses a mashbill of 64% corn, 24% wheat, and 12% malted barley, yielding a softer, more grain-forward character than traditional rye-heavy recipes. Meeting the strict requirements of Bottled in Bond designation, it is the product of a single distilling season, a single distillery, and aged a minimum of four years in a federally bonded warehouse before bottling at exactly 100 proof.Tasting NotesAroma: Oak and corn lead the nose, followed by citrus peel and a backdrop of warm baking spices. There is a subtle sweetness underneath — honey and vanilla — that signals the wheat-forward mashbill.Taste: The entry is rich and creamy, with immediate waves of vanilla and caramel coating the palate. At mid-palate, charred oak and cinnamon build structure, while blood orange and nutmeg add complexity. The mouthfeel is notably full and palate-coating, a hallmark of the sweet mash process and wheat-heavy grain bill.Finish: Long and memorable, with oak spices, toffee, and dark fruit lingering well past the last sip. Cinnamon warmth fades gradually, leaving a sweet, toasted grain quality that invites the next pour. How to Drink Wilderness Trail WheatedAt 100 proof, this bourbon rewards neat sipping — give it a few minutes in the glass to open up, and the sweet mash character becomes more pronounced. A few drops of water can further unlock the honey and dark fruit notes without diminishing body. For cocktails, try it in an Old Fashioned, where its natural caramel sweetness reduces the need for added sugar; a Wheat Whiskey Sour, where the creamy mouthfeel adds texture that leaner bourbons lack; or a Boulevard (bourbon, Campari, sweet vermouth), where the soft wheat profile balances the bitter components without competing with them.Best For Wheated bourbon enthusiasts exploring alternatives beyond Maker's Mark and Weller Gifting a serious bourbon drinker who values craft distillery provenance Building a tasting flight comparing sweet mash versus sour mash bourbons Celebrating milestones with a Bottled in Bond pour that carries award credentials Frequently Asked QuestionsWhat does Wilderness Trail Wheated taste like? It delivers a rich, creamy profile led by vanilla, caramel, and honey, with charred oak, cinnamon, and nutmeg adding depth. The finish is long and sweet, marked by toffee and dark fruit. How does Wilderness Trail Wheated compare to Maker's Mark? Both are wheated Kentucky bourbons, but Wilderness Trail's exclusive sweet mash process — using no backset — produces a softer, more grain-forward character than Maker's Mark's traditional sour mash approach. Wilderness Trail also bottles at a higher 100 proof (Bottled in Bond) compared to Maker's Mark's standard 90 proof, giving it more intensity and palate weight. Is Wilderness Trail Wheated good for sipping neat? Absolutely — the 100 proof strength provides enough backbone to stand on its own, while the wheat-heavy mashbill and sweet mash fermentation keep the profile approachable and creamy rather than hot or aggressive.Where is Wilderness Trail Wheated made? It is distilled and bottled at Wilderness Trail Distillery in Danville, Kentucky, located in the heart of the Bluegrass region's bourbon country. What foods pair well with Wilderness Trail Wheated? Its caramel and vanilla sweetness complements pecan pie and bread pudding. The charred oak and cinnamon notes work alongside smoked pork ribs or barbecue brisket. For cheese, try aged Gouda, which mirrors the toffee tones in the bourbon. Dark chocolate with sea salt also draws out the dark fruit characteristics on the finish. What sizes does Wilderness Trail Wheated come in? The standard offering is the 750ml bottle, which is the most widely available format. Is Wilderness Trail Wheated worth the price? It positions as a premium craft bourbon, sitting above mass-market wheaters in both proof and production pedigree. The Bottled in Bond designation, sweet mash distinction, and consistent competition medals — including a 93-point rating from Tastings.com — place it in strong value territory for the craft bourbon tier. Why Wilderness Trail Wheated? What separates this bourbon from the crowded wheater category is the sweet mash fermentation. While nearly every major Kentucky distillery relies on sour mash, Wilderness Trail builds each batch from scratch with fresh yeast and no remnants from previous runs — a process that yields a cleaner, more grain-expressive spirit. The results have not gone unnoticed: Double Gold medals at both the New York International Spirits Competition and TAG Global Spirits Awards, plus Gold at the San Francisco World Spirits Competition and the International Wine & Spirit Competition. For drinkers who have exhausted the usual wheated bourbon rotation, this is a genuinely different approach to the style backed by serious critical recognition.
