3 x Moses Rock Shiraz 20243 x Moses Rock Cabernet Sauvignon 2023 Moses Rock Shiraz 2024 Deep red with a violet hue. Aromas of plum, subtle spice and cedar notes. Generous flavours of bramble fruit, toasty oak, and white pepper are framed by finetannins, leading to a long, full finish. The fruit was selectively harvested and pumped to the fermenter with many wholeberries intact. The must was held cold for two days (cold-soaked) prior toinoculation to extract color and flavor. Once inoculated, the ferments were pumpedover two to three times daily to extract further flavor and tannin from the skins.Pressed prior to the completion of primary fermentation to ensure no harsh, bittertannins were extracted. Once the ferment was dry, the wine was transferred to thebarrel for malolactic fermentation, allowing the soft integration of the grape and oaktannins.
