Giant Fruit with Long-Lasting Storage Winter Melon (Benincasa hispida), also known as Ash Gourd, Wax Gourd, or White Pumpkin, is a fast-growing annual vine prized for its enormous fruits and versatile culinary uses. Native to South and Southeast Asia, this vigorous Cucurbitaceae family plant produces broad, heart-shaped lobed leaves, hairy stems, and curling tendrils that readily climb trellises and other supports. Yellow male and female flowers appear separately on the same plant, followed by remarkable fruits that can exceed 30 inches long and weigh more than 33 pounds. The thick skin develops a distinctive waxy coating that helps the fruit store for months, while the interior contains mild, slightly sweet white flesh and flat, ovate seeds. In the kitchen, winter melon is especially valued for its ability to absorb the flavors of soups, stews, and other savory dishes. Cultural & Culinary Significance Winter Melon is a staple ingredient in many South and Southeast Asian cuisines, where its mild flavor and tender texture make it especially useful in soups, stews, and braised dishes. The fruit is also valued for its hydrating qualities and nutritional content, including vitamins and minerals. The thick waxy coating allows mature fruits to be stored for extended periods, making winter melon a particularly useful crop for preserving a harvest long after the growing season. Why Grow Winter Melon? Harvest enormous fruits that can grow more than 30 inches long and weigh over 33 pounds. Enjoy mild, slightly sweet flesh that readily absorbs the flavors of savory dishes. Grow a vigorous climbing vine that makes excellent use of vertical garden space. Store mature fruits for months thanks to their thick skin and natural waxy coating. Add a productive Asian vegetable to your edible garden, food forest, or trellis.
