Cucurbita maxima This popular winter squash, also known as Japanese Pumpkin, is known for its sweet, nutty flavor, and fluffy, chestnut-like texture when roasted. Vines will produc e approximately two 3-4 pound fruits per plant, sometimes more. They can be harvested as soon as the skin turns dark green and hardens, but should be cured for about two weeks in a warm and dry location for maximum sweetness and depth of flavor.
