Place: Dorset, England Grape: 64% Chardonnay + 36% Pinot Noir Vibe: Unicorn Don't want to make bold claims, but this is about as Selosse-like as UK fizz gets. Incredibly limited, j ust 1000 bottles. 002 sees an extra year on lees than the first release. Extra vinous, from a single vineyard on chalk. True to the house style, a very long and slow oxidative pressing, wild ferment, full malo, bottled at 4.5 bars of pressure and left to get real toasty for four years. No sulphur, no dosage either.
