Yukon Gold Potatoes from Melissa’s are hand-selected for excellent quality. Look for firm, well shaped, fairly smooth potatoes. Avoid any green discoloration (which is caused by overexposure to light, also known as "light burn") and can be bitter. Avoid any potatoes that show signs of sprouting, wilting, wrinkling or decay.
