In 2015 when the extreme rice polishing limit was thought to be 8%, president Niizawa and his team created a 7% RPR sake. Kura no Hana sake rice native to Miyagi prefecture is poli shed over 350 hours and brewed with their house yeast to achieve the simplicity and complexity of this sake.
