Made in Chassagne Montrachet on clay limestone soils, the blend is roughly 1/3 Chardonnay, 1/3 Pinot Noir and 1/3 Aligoté. Grapes are gently pressed, settled for 24 hours, fermented at 20°C in temperature controlled vats with selected yeasts, and undergo secondary fermentation in the bottle using méthode traditionnelle, followed by at least 16–18 months ageing on the lees before disgorgement. Dosage is approximately 7–9 g/l. Tasting Note: In the glass, the Crémant reveals aromas of green apple, citrus zest and a touch of toasted brioche, underpinned by fine lees?driven notes. On the palate, it is crisp and lively, with a round mid?palate showing stone fruit and a delicate almond nuance.
