Made from 100 % Pinot Noir on clay limestone parcels in Chassagne Montrachet, the grapes are gently pressed using a pneumatic press (50hL), with musts fined and settled for 24 hours before fermentation. Primary fermentation takes place at 20 °C in temperature controlled vats using selected yeasts, with secondary fermentation carried out in the bottle via méthode traditionnelle. The wine matures on the lees for at least 16–18 months in a 15°C cellar before disgorgement, and dosage is approximately 7–9g/L. Tasting Note: In the glass, the Crémant de Bourgogne Rosé shows aromas of wild strawberry, red currant and a hint of ripe apricot. On the palate, it is fresh and vibrant, with lively red fruit kept in balance by fine acidity and a subtle mineral tension.
