The season started beautifully with a wet spring and late flowering, followed by a warm and dry season, producing wines with refined flavour, elegance and real personality. winemaking For the first time, the fruit for this wine was sourced from our Septimus Vineyard, located in central Wilyabrup. This block is one of the oldest in the region and produces wines with great personality and, as always, stunning elegance and charm. This blend is produced from 77% Cabernet and 23% Malbec, showing the typically intense, charming perfume, effortless structure and elegant beauty that this Single Vineyard site offers. This is a unique wine which showcases the influence and power of Malbec even in the smallest amounts. The Cabernet Sauvignon was fermented solely in static fermenters where delicate use of pump-overs and delestage were used to extract fine tannin and colour from this cooler vintage. The Malbec fruit was destemmed and transferred to an open-top fermenter where again, delicate use of pump-overs and hand plunging took place.
