100% Riesling from 50-70 year old dry-grown vines in the Eden Valley (primarily from the Schmidke family vineyard near Flaxman’s Valley and a smaller portion from the higher-altitude Springton area) on sandy loam over quartz and ironstone. The grapes are hand-harvested in small parcels at cool night temperatures, whole-bunch pressed with high solids, and undergo alcoholic fermentation with indigenous yeasts in stainless-steel tanks kept below 18°C. No malolactic fermentation. Aged 4 months on fine lees in tank before bottling. Tasting Note: Aromas show lime zest and white peach along with jasmine and wet slate notes. The palate delivers intense juiciness and medium sweetness with razor-sharp acidity and pronounced mineral texture.
