Call me crazy but I’ve been really into the simultaneous consumption of ice cream and wine as of late, and a glass of this with a scoop of cookies and cream is a pretty stellar way to close out a day. Cépage (aka what's in it!): 25% Gamay Noir: for big fruit tones of raspberries 50% Pinot Gris: for an acid and citrus backbone 25% Pinot Noir: for cherries and strawberries Winemaking practice: Carbonic fermentation on both the Gamay and the Pinot Noir, with the Pinot Gris being half direct press and half carbonic. Racked together into a 1000lt cube and bottled with inline carbonation, unfined and unfiltered.
