Taken from the hindquarter of the animal, it gets its name from the distinctive silver wall of connective tissue that runs along the side of the joint. It is a lean, well-exercised cut with plenty of natural flavour. Cooked with patience, silverside rewards you with tender slices of beef and a rich, savoury character. It is particularly suited to slow roasting, braising and dishes where you want the natural flavour of the beef to shine. At Swaledale, we select the superior end of the silverside close to the rump, often referred to as the corner cut or rump corner cut. This naturally more tender section delivers a better eating experience while still celebrating the character of a traditional whole-carcass cut. We also offer Topside of Beef, another classic roasting joint from the hindquarter. Like silverside, it is a lean and versatile cut, ideal for traditional Sunday roasts, but with its own distinctive texture and character.
