An eight-inch chef knife from a company that spent forty years making folding knives. It sounds like a stretch until you handle one — the fit and finish is exactly what you would expect from the people who build the 940. The blade is CPM-154 stainless with SelectEdge, a 14-degree-per-side grind against the 20 degrees most kitchen knives ship at. On an 8" blade that difference is obvious immediately: it drops through an onion rather than wedging it apart. CPM-154 is deliberately not one of the super steels. It is softer, which means it will need a steel more often than an S90V blade would — and it also means you can bring it back in seconds instead of grinding for twenty minutes. On a knife that meets a cutting board daily, that is the right trade. Maple Valley Richlite handle with a black G10 bolster. Compressed paper and resin — wood's look, polymer's indifference to water. It will not split or work loose. 8.04" blade, 7.37 ounces, full tang, gold pivot rings. Care: hand wash and dry. Never the dishwasher.
