Details: Distillery: Bimber Bottler: Distillery Bottling Bottling serie: Small Batch Vintage: / Bottled: 03.2023 Stated Age: / Casktype: 1st fill American oak ex bourbon Casknumber: Batch 4 Number of bottles: 7000 Strength: 51.2 % Size: 700ml Tasting notes: Nose: Bimber house style it is, their distillate is full of characters and can be easily detected here. Very tropical. Pineapple. Unripe mangos. Coconut flesh. Overripe pears. White glue. Slowly the fresh oak comes out, alongside vanilla essence and honey. 50% Chocolate. Turkish delights. Mildly vegetal & herbal at the back. Palate: Sweeter and thicker mouthfeel than the previous batches, with more toasted oak in the mix. Can still tell it’s young but the alcohol isn’t disturbing. Candied pineapples. Ripe apples. Custard cream. Cooked malt with filtered honey drizzled on top. Warm peppery spices. Dangerously “smooth” at 52.1% Finish: Short, mildly drying finish. Fruit tart and malty oak lingering. Longer age in the cask vastly improved the mouthfeel at the finish, cutting out the sharpness
