This cocoa was grown in the shade of the Bosawás Biosphere Reserve - the second largest rainforest in the Americas - by Indigenous people farming it to help protect the region's bi odiversity while supplementing their income. Here's a big pet peeve of mine: bars where the fruit is scant or unevenly distributed, with maybe one lone chunk in the middle. This bar is not that. Freeze-dried raspberries coat the entire back, creating a beautiful pop of colour as well as a satisfying chewy texture, with sweet and tart bursts in every bite. The chocolate itself carries smooth washed coffee notes (no acrid espresso) and a citrusy edge, all balanced by that concentrated berry flavour.
