L’Amuse Brabander is a goat’s milk Gouda from the Brabant region of southern Holland, aged just 6 months—surprisingly young by Gouda standards. Made with pasteurized milk from Saanen goats, it is overseen by renowned affineur Betty Koster, who founded Fromagerie L’Amuse with her husband Martin in 1989. Koster’s approach to aging is deliberately nuanced: the wheels mature at slightly warmer, less tightly controlled conditions than most modern cheese rooms, allowing seasonal shifts to gently influence the final character and yielding a tender, toothsome texture. The light natural acidity of the goat’s milk tempers the classic butterscotch richness of Dutch Gouda, creating a balanced and expressive flavor profile. Expect long, caramel-driven notes layered with hints of cajeta, strawberry yogurt, and subtle touches of grass and hay. Despite its age, Brabander tastes remarkably fresh and buttery, with a sweetness that lingers without becoming heavy.
