CASSIA CINNAMON is what is commonly sold in North America as CINNAMON. Also referred to as "baker’s cinnamon," CASSIA is grown primarily in Indonesia. It is earthy red in colour and has pungent, rum tones. Its quills are usually thicker than "true" (Ceylon) cinnamon quills. In intensity, this cinnamon lies between Ceylon cinnamon, which is on the milder side, and Vietnamese cinnamon, which is the strongest of the cinnamons. SUGGESTED USES: It can be used in savoury cooking, but is better suited to sweet cooking.
