The fruit ferments spontaneously with native wild yeasts in large, open neutral wooden vats, prioritizing gentle extraction over heavy forced power. It then matures for one year in neutral French oak barrels to allow the structural components to settle without wood dominance. It pours a deep ruby-purple color, releasing rich aromatics of wild blackberry, black cherry, dried rosemary, and damp earth. A full-bodied, robust frame balances a dense core of dark fruit with a firm, chalky tannin profile. Savory notes of cracked black pepper and crushed limestone develop as the wine breathes. A clean vein of high-altitude acidity runs underneath, keeping the mouthfeel fresh and light.
