Winemakers at Bodega Cerrón select fruit from old, organically farmed vineyards where the vines struggle through rocky limestone to lock in natural acidity. The hand-harvested grapes undergo spontaneous fermentation with indigenous wild yeasts in large neutral wood casks. It ages in neutral French oak to refine the tannins while avoiding heavy wood flavors or synthetic filtration. It shows a dark ruby color, releasing intense aromas of ripe black plum, fresh wild berries, and forest floor. On the palate, the bold, medium-to-full-bodied frame pairs concentrated dark fruit flavors with a serious, fine-grained tannin structure. Savory notes of ground pepper and stone blend into the fruit core across mid-palate. A clean, central thread of mineral acidity cuts through the volume, maintaining excellent freshness.
