Fabian Muñoz established Finca El Encanto in 2018 with a clear sense of purpose — to grow distinctive, high-quality varieties on his three-hectare farm perched at 1,930 metres. Pacamara, a large-bean hybrid of Pacas and Maragogipe varieties originating in El Salvador, is an unusual choice for Colombia. It's demanding to cultivate and lower-yielding than most, but at altitude it develops a complexity that makes the extra care worthwhile. Processing at El Encanto is precise and unhurried. Cherries are hand-picked at full ripeness, depulped on-farm, then fermented in concrete tanks under controlled conditions. After washing, the coffee dries slowly on patios and raised beds — a gentle finish that preserves the variety's natural structure and aromatic clarity.
