A pure Chardonnay expression from the Esterlin range, the Blanc de Blancs Éclat brings the second tier of the Éclat line, with six years of ageing on lees compared to five for the Brut. Sourced primarily from the Chardonnay vineyards of the Coteaux Sud d'Épernay and the Sézannais, vinified without malolactic fermentation to preserve the natural acidity and aromatic intensity of the grape. The low dosage allows the Chardonnay terroir character to come through cleanly and without interference. Tasting notes: A wine of great delicacy and some maturity aromas. Silky texture typical of Chardonnay, with citrus and yellow fruit freshness balanced by the complexity of extended lees ageing. Food pairing: Ideal as a refined aperitif. Outstanding with fine oysters, shellfish, delicate white fish and light seafood dishes.
