Gary is an all Ontario Saison tied to apples in a few ways... We boiled the wort for this beer over a wood fire at the start of September 2025 and threw in fresh Centennial hops we 've been growing here at our property. We then moved the wort to stainless and fermented it with a yeast isolated from the skin of a Wellington county apple. After primary fermentation was complete, we moved the beer to rest in ex-Chardonnay barrels on wild apples from trees at FERM FARM, and a pure pitch of brettanomyces yeast that we isolated from cider apples in PEC 5 years ago. Bottle conditioned to high carbonation. Serve cold and enjoy!
