Greensand Ridge is an award-winning, carbon neutral distillery located in a beautifully converted Victorian coach house in the heart of Kent. Will, owner and distiller, specialises in Gins, Rums and Fruit Brandies, making spirits with provenance, using sustainable practices and turning surplus produce from local growers into fine spirits. Greensand’s eaux de vie is a beautifully light aromatic raspberry serve infused with wheat spirit. Named Ghost after the German distillation technique, ‘Geist’ and it’s clear to see why after tasting. The subtlety of the spirit is most pleasing and lends itself to many a serve. All this from fruit deemed not good enough for the supermarket shelves…we beg to differ! The nose has an abundance of fresh raspberry, you might expect upon nosing that it’s another viscous and sweet liqueur; on the contrary, it’s actually dry with a similar vodka-like character. The bursting berry flavours build on the palate which leads to a surprisingly dry and long finish. This is a great option for a warm summer’s day. Serving suggestion: Ghost and Mediterranean tonic garnished with a decent chunk of lemon and added fresh raspberry, Plenty of ice!
