Delicious and virtuous, this is made from Kentish raspberries deemed too imperfect to be sold to supermarkets by a local farmer. Instead of going to waste, distiller Will Edge has infused them in 100% wheat spirit before distilling in his beautiful copper pot still. 'Ghost' derives from Geist, the German name for the technique, and this colourless eau-de-vie does indeed have a very subtle, almost haunting, autumnal flavour of fresh raspberry.
