We always give preference to Atlantic Halibut caught in the Gulf of Maine. When a Maine fish is not available, we will source from Canada. The Maine Halibut season is very short, starting mid-May and ending mid-June. Outside of the Maine Halibut season, local fishermen can land one fish per trip in federal waters.
