Excellent lightly chilled. The Process Handpicked certified organic Pinot Noir undergoes 10% whole cluster wild fermentation with indigenous vineyard yeasts. Gentle hand plunging during fermentation and maceration on skins, then pressed to puncheon and barrique where malolactic fermentation completes naturally. The wine settles on its own lees before racking to tank pre-bottling in late August with minimal 10 ppm sulphur. Unfiltered and unfined. The wines are unfiltered and unfined, with all yeast and bacteria coming from the grape, and the natural fining coming from time on its own lees in the barrel. Hebe is named after the Greek goddess of youth, daughter of Hera and Zeus, reflecting the vitality and natural energy of these terroir-driven wines.
