Koval Single Barrel Rye 750ML is a 100% organic rye whiskey from Chicago, Illinois, bottled at 40% ABV (80 proof) in a 750ml bottle. Scoring 91 points from Wine Enthusiast and 92 points from The Whiskey Wash, this single barrel expression stands apart from the American rye category by using a pure rye mashbill — no corn, barley, or wheat — and a heart-cut distillation method that captures only the cleanest middle portion of each run.Quick Facts: ABV: 40% (80 proof) | Origin: Chicago, Illinois, USA | Aged 3–4 Years | Distillery: Koval DistilleryProduction & HeritageKoval Distillery, founded in 2008 in Chicago's Ravenswood neighborhood, was the first distillery to open in the city since the mid-1800s. The Single Barrel Rye is produced from a 100% organic rye grain mashbill — a rarity in American whiskey, where most rye expressions blend in corn or malted barley. Each batch undergoes Koval's signature heart-cut distillation, meaning only the purest center of the distillation run is collected, with the heads and tails discarded entirely. The spirit then matures for roughly three to four years in 30-gallon new charred American oak barrels, which are significantly smaller than the industry-standard 53-gallon casks; the increased surface-to-liquid ratio accelerates wood interaction and contributes a distinctive depth of oak character to each individual barrel.Tasting NotesAroma: The nose opens with classic rye baking spice — nutmeg and cinnamon — before moving into charred sugar and toasted barrel notes. Underneath, delicate threads of jasmine, honey, vanilla, and coconut add a floral sweetness that tempers the grain's peppery bite.Taste: The entry is softer than many ryes at this proof, with baking spice folding into rich chocolate sauce and gingerbread. At mid-palate, ginger and cinnamon balance like a well-constructed spice cake, while faint sweetness reveals layers of coconut, almond, and a fleeting touch of mint. The overall impression is fresh and light, with a mellow candy-corn sweetness that keeps the palate engaged.Finish: Longer than expected for a 40% ABV spirit, the finish delivers maple syrup sweetness and a creamy mouthfeel before drying gently into peppery rye spice. The interplay of sweet and dry lingers, rewarding unhurried sipping. How to Drink Koval RyeNeat or with a single ice cube is the best starting point — the heart-cut distillation produces a clean, approachable spirit that doesn't need much dilution to open up. That said, the 100% rye grain bill and assertive spice profile make it a natural cocktail backbone. Manhattan: The gingerbread and baking-spice character pairs seamlessly with sweet vermouth and Angostura bitters, creating a spice-forward classic. Sazerac: Koval's peppery grain profile and maple sweetness stand up to absinthe and Peychaud's without disappearing under the rinse. Rye Old Fashioned: The coconut and vanilla undertones add dimension when paired simply with demerara syrup and orange peel. Koval Single Barrel Rye leads with baking spice, gingerbread, and chocolate before softening into coconut, almond, and a maple-syrup sweetness that finishes with a classically peppery, drying rye spice. How does Koval Rye compare to WhistlePig? WhistlePig's flagship 10 Year is aged significantly longer and bottled at a higher proof (100 proof vs. Koval's 80 proof), delivering more complexity and barrel influence. Koval competes on a different front — its 100% organic rye mashbill and heart-cut distillation produce a lighter, fresher profile at a more accessible price tier, with multiple reviewers noting it punches close to WhistlePig's quality relative to cost.Is Koval Rye good for sipping neat? Yes — the heart-cut distillation yields a notably clean, smooth spirit at 40% ABV, making it approachable for neat sipping without the burn that higher-proof ryes can carry.Where is Koval Rye made? Koval Single Barrel Rye is distilled, aged, and bottled at Koval Distillery in Chicago's Ravenswood neighborhood on the city's North Side — the first legal distillery to operate in Chicago since the mid-1800s.What foods pair well with Koval Rye? Smoked brisket complements the charred-oak and pepper notes; dark chocolate or mole sauces echo the mid-palate cocoa; sharp aged cheddar contrasts the maple sweetness; apple tart or gingerbread desserts mirror the spice profile; and charcuterie with honey and cracked pepper ties into both the floral and spicy elements. What sizes does Koval Rye come in? The standard release is a 750ml bottle at 80 proof; Koval also occasionally releases private barrel picks at cask strength (approximately 55% ABV / 110 proof). Is Koval Rye worth the price? Koval Single Barrel Rye positions as a mid-range craft rye — priced above mass-produced options like Rittenhouse but below premium aged ryes like WhistlePig 10 Year. The combination of 100% organic rye, single barrel bottling, heart-cut distillation, and consistent critical scores in the low 90s represents strong value within the craft whiskey tier. Why Koval Rye?The 100% rye mashbill is the headline, but the real differentiator is the full production philosophy: organic grain, heart-cut distillation that discards everything but the cleanest spirit, and smaller-format 30-gallon barrels that intensify wood contact during three to four years of aging. That approach earned 91 points from Wine Enthusiast, 92 points from The Whiskey Wash, and a Silver Medal at the 2022 Los Angeles International Spirits Competition. Each bottle carries a single barrel number, meaning no two are blended — what you taste is a direct, unblended snapshot of one cask from one of America's most distinctive urban distilleries.
