Coenobium is a blend of Trebbiano, Malvasia, and Verdicchio. The wine was allowed to rest on its lees in stainless steel tanks, adding texture, body, and unique aromas. With notes of fennel, chamomile, almonds and tangerine, this is a fresh and complex white. Only 4,000 bottles produced annually. The Cistercian order of nuns at Monastero Suore Cistercensi of Lazio, Italy began farming their own vineyard in 1963, but it wasnt until the early 2000s, when their wines came to the attention of winemaking consultant Giampiero Bea (son of legendary winemaker Paolo Bea), who fell in love with their wines and pushed them forward, and like Bea's wines, Suore Cistercensi's are uniquely wild but elegant. 11.5% ABV Show more
