There is brightness and a lovely texture from the use of lees in aging, followed by a touch of salinity on the finish. Winemaking Fermented dry with wild yeasts and bottled unfined and unfiltered. Vineyard Grapes are all dry farmed, no-till and sustainably farmed – if not organically farmed. Underwood Mountain has ancient volcanic soil – ashy, sandy loam topped with windblown loess. They have planted over 500 native bare root shrubs plus multitudes of wildflowers and grasses. They seed cover crop and generally use only organic sprays.
