Scissors and shears: fabric and sewing scissors (including Gingher, Kai, and Fiskars), kitchen shears including take-apart pairs, and pinking shears — yes, really; most shops won't touch them. Single-bevel Japanese knives finished on hand stones. The one thing we don't sharpen: salon and barber hair shears. How we sharpen, by hand What happens at the bench in Edina: Inspection. Each knife is checked for chips, bent tips, and worn heels. We note the steel and the maker so we select an appropriate angle and sharpening plan for each knife. Bevel reset. This will remove only enough metal to reach fresh steel behind the dull edge. Refinement. We work up through medium and fine grits and deburr with intention. Strop. The final passes leaves an edge that bites on general purpose knives and less so on fish knives. Fabric and sewing scissors, kitchen shears, pinking shears, serrated bread knives, and single-bevel Japanese knives are all sharpened at the same per-knife bundle price.
