Roland Velich handles the hand-picked fruit from hillsides rich in calcium carbonate and granite soils to optimize structural mineral balance. Spontaneous fermentation occurs with native wild yeasts inside large neutral oak casks, completely avoiding modern high-temperature styling; the wine undergoes an extended maturation process on its fine fermentation lees to encourage texturally driven complexity. It displays a bright straw-yellow color, releasing clean aromatics of fresh yellow apple, citrus peel, and wild herbs. On the palate, a sleek, medium-bodied frame balances focused orchard fruit flavors with an underlying chiseled mineral core. A lively wave of natural acidity cuts directly through the waxy texture, providing excellent lift and refreshing energy. Subtle notes of fresh fennel and white pepper add depth across the clean mouthfeel. It finishes completely dry, persistent, and clean.
