Each batch of our Extra Sharp takes over 18 months to age into a bold flavored cheddar. Ashe County cheeses are made in the NC mountains. It is not organic or grass fed milk but th eir ingredients are very simple and a way better alternative to store bought cheeses. All the milk comes from the area so its local too.
