Also known as bok choy, Pak Choi White Stem is an open-pollinated variety that produces a large bouquet of healthy dark green leaves and crunchy white stems. In our home, we love t o cook pretty much any vegetable, but bok choy is our go-to veggie when suppertime sneaks up on us. It requires so little prep and just a few minutes of cooking time. A little butter and soy sauce and you’re done. Its mild flavor also makes it perfect for finicky eaters who are reluctant to try wilted greens. Bok choy does well when planted in early spring and really excels in the fall garden. Give them a little bit of frost protection and they will hold through the chilly fall months.
