Most online sign shops use 14 or 16-gauge, roughly half the thickness. Ours gets powder-coated after cutting, and that finish is rated around 20 years in direct sun before it needs redoing. It costs more than a printed sign, and the reason is the steel. 12-gauge holds its shape on a wall or a gate post for decades, where thinner metal dents and starts rusting at the cut edges.
