Gojer’s “SAUVIGNON” is a fruity, mineral, round as well as complex white wine made from 100% Sauvignon Blanc. Following manual harvest, vinification process starts with very delicate and soft pressing. Short maceration on the skins for about 6-10hours. After a static sedimentation of the most and racking (at least 48hrs at 6°C, fermentation process continues at controlled temperature and very slowly. Sedimentation continues until the next spring. A 10% of the grapes ferments for about 3 days whole for extra complexity to the most. The appearance shows a straw yellow colour with light greenish nuances. On the nose citrus fruity nose of grapefruit, tropical hints of maracuja, herbs, and grassy hints. The sip is medium-body, lively & enticing, with a continuous minerality, delivering freshness and character, with beautiful tropic aromas accompanying the aftertaste. Food-match: A good aperitif companion. Excellent in combination with crustaceans, seafood, and raw-fish carpaccio or salads, and summer-style pasta dishes & vegetables. Recommended serving-temperature of 8°-10°C.
