Region: Brescia, LombardyGrapes: 80% Chardonnay, 20% Pinot NeroDescription: Bright golden in colour, the bouquet leaps from the glass of crisp green apple, lemon and peach with fresh baked bread and toasty notes. The palate has a stunning texture with fine, mouth coating bubbles that is complex and creamy with notes of ripe citrus fruits and savoury hints that linger.Winemaking: Hand picked grapes are soft pressed with a short, cold maceration on skins prior to fermentation. 1 st fermentation is partly done in temperature controlled inert vessels and partly in French oak barriques and then aged for 6 months in those same vessels. Blended and bottled for 2 nd fermentation in the bottle and aged on lees for over 21 months before being disgorged and a light dosage of 6g/l.Sommelier’s Selection: Ideal as an aperitivo on its own but because of its complexity and structure, it is well suited to be enjoyed with courses of fish, white meats and cheeses such as our Merluzzo, the Aquna Murray cod with Jerusalem artichokes, orange and radicchio.
