Our desire for perfection has led us to create this knife, which is even sharper, more beautiful and more comfortable than the previous generation, while still offering the same extraordinary fun factor when cooking. This knife is full of history and generations of experience from professional blacksmiths who created a new standard of craftsmanship. The 5Cr15MOV stainless steel blade is shaped by hand before being heat treated using the traditional techniques of master blacksmiths. The old and secretive hardening technology which is based on generations of know how gives the knife a hardness between 58 and 60 HRC. This not only provides extreme and long-lasting sharpness but also makes the sharpening process easy for you. Due to the special shape of the blade, you can use the first three quarters for slicing and chopping fine vegetables and meat, while the last quarter is perfect for chopping chicken, duck and other tough cuts of meat that contain bones. This makes the Tatara Evolution your perfect companion, even outdoors and for barbecues. The handle is crafted from natural high quality ebony and is held together by G10 in combination with two brass rings.
