This junmai daiginjo, brewed from Yamagata prefecture’s Dewasansan rice, is so popular that it’s considered the “backbone” of Tatenokawa Brewing Company. Clean and crisp as a prist ine mountain stream, it was inspired by the majesty of Mount Chokai (aka Dewa Fuji), the tallest peak in Yamagata.
