A cool, settled summer and long ripening period allowed flavours to develop slowly, retaining natural acidity and finesse while building structure and depth. WinemakingHand-picked fruit was fermented in stainless steel with 35% whole bunches and 65% destemmed berries. Following a four-day cold soak, fermentation ran for 19 days with gentle extraction.
